Since today is Mother’s Day or Mothering Sunday as we call it in the UK I think this coconut custard tart would be a nice sweet treat to finish off any meal or brunch. It’s a simple coconut custard tart to make and it looks very posh on any dessert table. When I made the custard for this recipe I created it a bit different from the custard I used in my trifle which was a full-fat cream custard. It really does taste like a coconut cream pie tart which I really enjoyed. Easy Custard Recipe This custard is made with 2% evaporated milk and worked out better than I had expected. I’m not sure if it will work with the 1% or fat-free evaporated milk but you could always give it a try, right? I might even try to make a coconut custard recipe with coconut milk to jazz up the flavour or use one can of evaporated milk and one can of coconut milk.
